Starting the New Year Right

One of my goals for 2014 was to make sure that I make at least 4 homemade meals each week - this does not include leftovers. 

The reasoning behind this goal has many facets. First, it is less expensive than takeout or eating out at a restaurant. Second, it's healthier because I know exactly what I'm using, I can modify ingredients, etc. Third, I enjoy cooking for my family. Knowing that I am giving them something that makes them healthy and happy is good for me.

So with that, I decided that we would start the New Year off right. I am making Roast Beef with Ginger Ale in my slow cooker today. The greatest thing about a slow cooker is that you can just put everything in the slow cooker and let it go. By the time you get home dinner is ready. Super simple and very yummy.

This Roast Beef with Ginger Ale recipe is very easy, very simple. It is something that even the most novice cook can make.

Roast Beef with Ginger Ale Recipe
Makes 8 servings

Ingredients:
3-pound beef roast
1/2 cup flour
1 envelope dry onion soup mix
1 envelope dry brown gravy mix
2 cups ginger ale
1 medium onion

Simple Steps:
1. Place the flour in a large bowl. Coat the roast with flour. Reserve any flour that doesn't stick to the roast in the bow. Place the roast in your slow cooker.
2. Combine the dry soup mix, gravy mix, remaining flour, and ginger ale in a bowl. Mix well.
3. Pour the sauce over the roast.
4. Cut the onion in half on the vertical. Thinly slice each half on the vertical. Place onions over the roast in the slow cooker.
5. Cover and cook on Low 8-10 hours or until the roast is tender.
6. Remove roast. Serve gravy with mashed potatoes.
